Heilige Koffie `ZEGE`

Zege bos gekweekte koffie, Zege Forest grown Coffee is de nieuwe rauwe koffie van ons bedrijf. Rond het Tana-gebergte in Zege, koffie groeit al sinds mensenheugenis. Niettemin, deze regio doet niet behoren tot de klassiek producerende regio’s van Ethiopië. Oorspronkelijk was de koffie van de het merengebied was boskoffie, maar vanwege het kappen van de afgelopen decennia, dit historische koffie is bijna verdwenen rond het Tana-meer. De enige uitzondering is de Schiereiland Zege. Hier vinden we het grootste samenhangende bos aan het Tana meer; hier de koffie groeit in zijn oorspronkelijke vorm. Volgens onze onderzoeken is dit te wijten aan zijn ‘ unieke “heilige” oorsprong. De heilige “Betre Maryam” verdeelde eens zijn toverstok in drieën onderdelen. Uit het hoofd sprongen de eerste koffieplanten. Dit unieke verhaal is vereeuwigd in een muurschildering in een van de zeven kloosters op Zege. Bovendien, er is ook een oud boek waarin deze speciale gebeurtenis wordt beschreven. Voor deze historische en religieuze redenen, nog steeds is er geen landteelt in de conventionele zin. Dus, de “heilige” koffie beschermt het bos en het bos beschermt het “Heilige” koffie. Op Zege is koffie echt een speciale waar. Traditioneel, de inboorlingen en de broeders van de kloosters cultiveren de koffie voor hun eigen consumptie en de lokale markt met veel ontzag. Er zijn veel heel verschillende kwaliteiten, vrijwel alles is worden verzameld en gebruikt. In de afgelopen vier jaar (gewascycli) hebben we ons geoptimaliseerd oogsten en verwerken in samenwerking met de inheemse koffieboeren en kloostergangen, en dus hebben ze een prachtige Zege Forest-koffie gemaakt. De koffie die zich aldus in de loop van de tijd heeft ontwikkeld, heeft al belangrijke partners gevonden. InterAmerican koffie, van Neumann Gruppe (‘s werelds grootste importeur van onbewerkte koffie), is financieel, logistiek en technisch betrokken bij dit uitzonderlijke koffieproject. Het is deze betrokkenheid waarmee de koffie het uiterlijk internationaal heeft verdiensten. Het project wordt ook ondersteund en gefaciliteerd door de World-Habitat-Society, die zich inzet voor de bescherming van het bos, de regionale ontwikkeling en duurzaam toerisme en het behoud en herstel van de kloosters en de grafische kunst van het schiereiland, die gedeeltelijk uit de 12e eeuw stamt. In de toekomst zal onze koffie in het bos van Zege een rol spelen in al deze activiteiten, omdat door al deze projecten deze regio duurzaam zal worden versterkt en zal dus ook in de toekomst de productie mogelijk maken van dit prachtige en unieke Zege bos gekweekte koffie met zijn “heilige” oorsprong.

Informatie over Zege: De afmeting van het schiereiland is ongeveer 3,5 x 5 km – er zijn ongeveer 9.500 inwoners, waarvan er ongeveer 3.000 op het platteland van “Afaf” wonen. Er zijn 7 kloosters op Zege. De koffie wordt op 4000 meter hoogte verbouwd m.s.l., de oogsttijd is in februari en maart. Zege bos geteelde koffie is een exclusief product van Stefan E. Bös en InterAmerican Coffee GmbH, ontwikkeld in samenwerking met alle zeven kloosters en de inwoners van Zege. Smaak: goed gebalanceerd en rond, met volle body en zachte, zachte kruidigheid, fruitig.

Ernesto Illy International Coffee Award 2016
NEW YORK, November 2, 2016 – On November 1st, illycaffè, the Trieste based family-owned
Italian roaster, leading brand in top quality coffee, presented the 1st Annual Ernesto Illy
International Coffee Award at the Delegates Dining Room of the United Nations. With this
award, illycaffè wants to recognize the coffee growers’ commitment to quality and
sustainability, emphasizing the importance of working hand-in-hand with them, while also
pursuing the company’s dream to offer the greatest coffee to the world.
The illy Quality Lab in Italy identified, among the 2015-16 season’s crops, the 3 best coffee lots
from the 9 most representative coffee producing countries of the unique illy blend. This year
the competing countries are Brazil, Colombia, Costa Rica, El Salvador, Ethiopia, Guatemala,
Honduras, India and Nicaragua. Then, an internal jury selected the one that, among those 3,
represents the best of each country.
Hosted by the Illy Family and featuring Master of Ceremonies Gordon Elliott, the award gala
honored and recognized all of the 27 finalists, who nurture the best quality beans in the world
for illycaffè. The coffee producers involved in the event traveled to New York with the support
of United Airlines, which now proudly serves the illy blend on all domestic and international
flights and lounges.
“Exactly 25 years ago, my father Ernesto Illy created the Brazilian Quality Award, which
triggered the transformation of Brazil into a high quality coffee producer – said Andrea Illy,
Chairman of illycaffè – Today we celebrate this important milestone by extending this prestigious
award to all the major producing countries of the unique illy blend, with the aim of building the
future of coffee by bringing together growers & coffee lovers”.
The 9 country winner coffees were tasted yesterday by an international independent jury in
different preparations, to choose the ‘best of the best’ coffee of the 2015-16 season’s crops.
The jury – mentored by author Mark Pendergrast and illy Quality director David Brussa, and
composed by Peter Giuliano (SCAA Director), Kerri Goodman (publisher), Corby Kummer
(journalist), Grace Hightower (philantrophist), Suvir Saran, Viki Geunes and Luigi Taglienti
(Michelin starred chefs), Maria Loi (chef, restaurateur, Greek food ambassador), Adolfo
Henrique Vieira Ferreira (Chairman of the Brazil Specialty Coffee Association) – awarded Ahmed
Legesse from Ethiopia with the Ernesto Illy International Coffee Award.
“This is an Ethiopian coffee with an intense and delicate flavor. Its unique high intensity floral
jasmine notes are mixed with a slight hint of citrus and fresh fruit. Coffee is believed to have
originated in the forests of Ethiopia, and the coffee plant still grows here in the wild, amid the
shady vegetation. It is picked by hand in the plantations and even in domestic gardens, where
coffee ripens alongside the other crops – the jury’s spokesperson declared about the winning
coffee – A special coffee with a mild, delicate aroma and a unique perfume with distinctive floral
notes of jasmine and a hint of citrus fruit”.
An honorable special mention went to Honduras, which took second place obtaining an equal
Global Quality Score, but was surpassed by the Ethiopian coffee in the judging category
evaluation of Aroma Intensity of Espresso.
During the event, Andrea Illy recalled the 3 virtues of coffee – pleasure, health and
sustainability – and the virtuous circle between the well-being generated by the consumer
response and the economic value benefiting the producing countries. This virtuous circle must
be nurtured and accelerated by increasing product value with quality, differentiation and
sustainability.

Er was een tijd dat het hebben van koffiekennis nog niet gekaapt was door de hipsten der hipsters. Een tijd waarin het nog niet ergerlijk werd gevonden als u de ene boonsoort niet van de andere wist te onderscheiden en waarin koffie weliswaar een primaire levensbehoefte was, maar zeker geen lifestyle. Maar tijden veranderen en wie tegenwoordig zoekt naar het hogere op koffiegebied, moet zich wentelen in een wereld van onbewerkte betonnen vloeren, schoolstoeltjes, baarden, knotten en obscure Scandinavische singer-songwritermuziek. Ach, de koffie lijdt er niet onder. Integendeel: onder de hippe vleugels is de koffiecultuur innovatief en volop in beweging, met steeds betere koffie tot gevolg.

Maar hoeveel van die snotneuzen die de hartjes in de latte maken hebben wel eens op een echte koffieplantage gestaan? De lucht trillend in de zon, oneindige groene heuvels en mensen met rieten manden op hun rug die de koffiebonen plukken. Voor Masho Fantaye, eigenares van Harar Coffee, is het geen onbekend tafereel. Haar jeugd speelde zich af op de koffieplantage van haar familie in Ethiopië, de bakermat van koffie. En daarvandaan komen de Jimmabonen. De smaakomschrijving luidt: 'tonen van prikkelende zoete vruchten en bitterzoete chocolade, gecombineerd met een volle body'. Die choladetonen zijn kenmerkend voor koffie uit deze regio; streekgenoot Keffa heeft ze ook, maar smaakt wat eleganter. Bij Harar Coffee is een keur aan boonsoorten te krijgen uit diverse delen van Ethiopië. Elke week worden in Amsterdam kleine hoeveelheden gebrand - vers dus. Eén of twee keer per jaar gaat Fantaye in haar moederland op koffiejacht.

Vorig jaar november heropende Harar Coffee met een opgefriste look. En met al de koffiekunde en het authentieke karakter moeten we ons afvragen: is Harar nu niet eigenlijk de hipste van allemaal?

Barista: van koffieplantage in Ethiopië naar eigen zaak in Amsterdam

Ik herinner me vooral de geur,” zegt Masho Fantaye. Ze groeide op op een koffieplantage in Ethiopië. Haar overgrootouders begonnen een familiebedrijf, dat tot 1978 in handen was van haar ouders. Toen werd het genationaliseerd door de staat. Nu heeft Fantaye haar eigen koffiespeciaalzaak: Harar Coffee. De winkel dankt zijn naam aan het gebied in Ethiopië waar de koffieplant wordt verbouwd.
